A Good Little Recipe

Last night when I went to make dinner I couldn’t find my weekly menu but I knew chicken tenderloins was in the recipe. So again, it was the Chopped show at my house. My basket was my fridge so it was fairly easy.

These were my ingredients:

9 chicken tenders

couple hand fulls of cherry tomatoes cut in half

1/4 cup chopped basil

3 garlic cloves chopped

2 TBS olive oil

3 TBS butter

8 oz linguine

Get your water for your pasta started. Remember to add a good amount of salt to the water. Cook according to the box.

Put the olive oil in a skillet. Added chicken when oil gets hot. Cook chicken 3 minutes per side.

Add tomatoes, cook another 4 minutes.

Add garlic and basil last and cook 5 more minutes.

Last but not least, add butter.

Drain noodles after cooking and add to chicken mixture.

I grated fresh parm cheese to go over the top

Serve with bread and salad!  Easy! Enjoy!

Easiest One Pot Dinner

I found this recipe on Pinterest but of course I changed it a little. The Pinterest recipe that I made didn’t have meat which is great for vegetarians or a meatless meal. We try to have a meatless meal once or twice a week for health but we also like our meat and potatoes! You can do this recipe either way and it is full of flavor.

INGREDIENTS

  • 1 pound spaghetti
  • 1 (12.8-ounce) package smoked andouille sausage, thinly sliced (OPTIONAL)
  • 1 large onion, thinly sliced
  • 3 cups halved grape tomatoes
  • 2 cups fresh basil leaves, loosely packed
  • 4 cloves garlic, thinly sliced
  • 1/2 teaspoon of crushed red pepper flakes
  • Kosher salt and freshly ground black pepper, to taste
  • 1 cup grated Parmesan

INSTRUCTIONS

  • In a large stockpot or Dutch oven over medium high heat, combine spaghetti, sausage, onion, tomatoes, basil, garlic and 4 1/2 cups water; season with salt and pepper, to taste.
  • Bring to a boil; reduce heat and simmer, uncovered, until pasta is cooked through and liquid has reduced, about 8-10 minutes. Stir in Parmesan.
  • Serve immediately.
